    Carousel proudly partners with five beloved homegrown brands to present a lineup of co-created buffet dishes. Each one is inspired by Singapore’s culinary roots, reimagined by our chefs with bold flavours and a side of nostalgia.
  • 45-degree Truffle Poached Eggs and Black Pepper Crab Toast by Chef Chee Kian | Breakfast Buffet – A refined take on traditional breakfast, best enjoyed with Kim Guan Guan Coffee’s rich kopi and tea on the side!
  • Salmon Rillettes with Tobiko in Crispy Youtiao & Roti “Youtiao” John by Chef Chin Siong | Lunch & Dinner Buffet – Two takes on the humble youtiao: one with creamy salmon rillettes and tobiko; the other, a Roti John-inspired omelette roll with minced chicken and eggs – a tribute to You Tiao Man.
  • Chilli Crab Popiah by the late Chef Saiful | Lunch & Dinner Buffet – A recreation of the classic popiah with bold chilli crab, with crispy beans and fresh cucumber, made in collaboration with Mr Popiah
  • Softshell Crab Imperial XO Dried Scallop Vermicelli by Chef Kok Wai | Lunch & Dinner Buffet – A flavourful homage to Cita Rasa’s heritage, with umami-rich dried scallops, XO sauce and softshell crab elevating this humble favourite
  • Singapore Truffle Wagyu Beef Cheek Polo Bun by Chefs Hua Kai & Saifullah | Lunch & Dinner Buffet – Inspired by Golden Pillow 933’s iconic curry-in-a-bun, reimagined with tender wagyu beef cheek, fluffy polo bun, and a touch of truffle.
  • (Carousel Exclusive) Sambal Lobster Nasi Lemak by Chef Johari | Lunch & Dinner Buffet – A fiery, indulgent rendition of the local classic, featuring sambal Boston lobster atop our signature nasi lemak.
